Cooking time: 1 3/4 hours plus 1 1/2 hours

1 1/2 cups self-raising flour
1 teaspoon baking powder
3/4 cup fine sugar
3/4 cup soft margarine
3 medium-sized eggs
grated rind of 1 lemon
1 tablespoon lemon juice
for simple glace icing
1 cup confectioners sugar, sifted
2 tablespoons lemon juice
candied lemon slices to decorate
method
1. Heat the oven to 170°C (325°F). Grease a deep 7 inch round cake pan, line with greaseproof or waxed paper and grease again.
2. Sift the flour and baking powder into a bowl. Add the remaining ingredients and beat until glossy and light.
3. Pour into the tin and bake for 1 1/4 - 1 1/2 hours or until a skewer inserted into the centre comes out clean.
4. Rest for 3 minutes in the tin, then turn out on to a wire rack to cool.
5. To make the icing, beat together the sugar and lemon juice until smooth. Cover the cold cake. Decorate with lemon slices.
