1. Peel and core the apples. Chop the almonds and mix with half the sugar.
2. Beat the egg yolks with the rest of the sugar and stir in 1/2 cup of the breadcrumbs. Coat the apples with this mixture.
3. Put the cornstarch on a plate or in a paper bag and roll the apples in this; use two spoons if the cornstarch is on a plate.
4. Melt the butter in an ovenproof dish, arrange the apples in the dish and fill the centres with the almond and sugar mixture.
5. Sprinkle with the remaining 1/2 cup breadcrumbs, and bake in the centre of a moderate oven (180°C, 350°F) until tender, about 45 minutes.
