1/2 cup All purpose flour
2/3 cup rolled oats
1/2 cup flaked coconut
1/2 cup fine sugar
1/3 cup butter, cut in pieces
1 tablespoon corn syrup or honey
1/2 teaspoon Baking soda
method
1. Heat the oven to 150°C (350°F). Lightly oil or grease 2 baking sheets.
2. Sift the flour, combine with the other dry ingredients except the soda and set aside.
3. Melt the butter and syrup or honey together in a heavy-bottomed pan, stirring.
4. Combine the Baking soda with 1 tablespoon boiling water and blend into the syrup and butter, off the heat. Gradually mix in the dry ingredients.
5. Drop the mixture in small spoonfuls on to the baking sheets, spacing 3 inch apart.
6. Bake in the centre of the oven for 20 minutes. Cool slightly then transfer to wire racks.
