Chocolate suet sponge and chocolate sauce form hidden layers beneath the topping in this chocolate meringue suet pudding.

2 tablespoons butter
1 tablespoon oil
1 cup flour
1 large egg
1 1/4 cups milk
3 tablespoons mincemeat
1 medium-sized cooking apple, peeled, cored and chopped
method
1. Heat the oven to 200°C (400°F).
2. Put the butter and oil in a 8 inch diameter 4 inch deep baking dish.
3. Put the dish in the oven to heat for 8 minutes. Sift the flour into a bowl. Make a well in the centre and add the egg and one-quarter of the milk. Beat well together, then gradually beat in the rest of the milk.
4. Spread the mincemeat and apple on the bottom of the hot, greased dish.
5. Pour in the batter. Bake for 20 minutes, then reduce the temperature to 190°C (375°F).
6. Continue baking for 40 minutes or until the pudding is risen and golden.
