The acidity of apples and bite of cinnamon are sweetened by raisins under a top layer of crunchy whole wheat breadcrumbs and brown sugar.

3 medium tart apples, peeled, cored and thinly sliced
1 tablespoon lemon juice
5/8 cup seedless raisins
1/4 cup soft dark brown sugar
1 level teaspoon ground cinnamon
for the topping:
1 1/2 cups whole wheat breadcrumbs
2 tablespoons polyunsaturated margarine, melted
1 level tablespoon soft brown sugar
1/2 level teaspoon ground cinnamon
method
Preheat to 150°C (300°F)
1. Toss the apples with the lemon juice, then mix them with the raisins, sugar and cinnamon. Spoon the mixture into an oval ovenproof dish about 9 inch long.
2. To prepare the topping, spread out the breadcrumbs on a baking tray and bake in the heated oven, stirring occasionally, for 15 minutes or until they are dry. Put them in a small bowl and mix in the margarine, sugar and the cinnamon. Increase the oven temperature to 190°C (37S°F.
3. Sprinkle the topping over the apples and bake in the heated oven for 30 minutes. If the topping is browning too fast, cover it loosely with greaseproof or baking paper.
