9 slices of stale brown bread, crusts removed
1/4 cup softened butter
2 pound tart apples, peeled, cored and sliced
3 tbsp corn syrup
1 tbsp finely chopped scented geranium leaves
Greek yogurt, custard or cream, to serve
method
1. Preheat the oven to 160°C/325°F.
2. Spread the slices of bread generously with butter and cut each slice into quarters.
3. Place a layer of one-third of the bread quarters over the base of a pie dish. Cover this with half the apple, dribble one tablespoon of corn syrup over and then sprinkle over half of the geranium leaves.
4. Repeat with a second similar layer and finish with a layer of overlapping bread quarters to cover. Spread this with the remaining syrup.
5. Bake for 50 minutes, then increase the temperature to 190°C/375°F and bake for 10 minutes more, until crisp and golden brown. Serve hot, warm or cold with yogurt, custard or cream.
