Apple Couscous Pudding

ingredients

serves 4
2 1/2 cups apple juice
2/3 cup couscous
1/4 cup Seedless white raisins
1/2 tsp mixed spice
1 large Bramley cooking apple, peeled, cored and sliced
2 tbsp demerara sugar
natural low fat yogurt, to serve

method

1. Preheat the oven to 200°C/400°F/. Place the apple juice, couscous, Seedless white raisins and spice in a pan and bring to the boil, stirring. Cover and simmer for 10 - 12 minutes, until all the free liquid is absorbed.

2. Spoon half the couscous mixture into a 5 cup ovenproof dish and top with half the apple slices. Top with remaining couscous.

3. Arrange the remaining apple slices overlapping over the top and sprinkle with demerara sugar.

4. Bake for 25 - 30 minutes or until golden brown. Serve hot, with yogurt.
