4 large dessert apples, peeled, cored and cut into
1/4 inch thick rings
100 g (4 oz) vanilla sugar
FRITTER BATTER
1 cup All purpose flour
1/4 teaspoon salt
1 tablespoon oil
1 egg, separated
1/4 pint milk or milk and water
oil for deep frying
Confectioner’s sugar to sprinkle
method
1. Dip the apple rings in vanilla sugar and leave to dry slightly on absorbent kitchen paper.
2. Prepare the fritter batter by sifting the flour and salt together into a bowl. Make a well in the centre and pour in the oil and egg yolk.
3. Gradually draw the flour into the egg, adding the milk a little at a time, beating to produce a smooth batter.
4. Whisk the egg white until it stands in firm peaks and fold into the batter mixture.
5. Heat the oil to 190°C (375°F) and coat the apple rings in the batter.
6. Fry the apple rings in the oil for about 4 minutes or until golden and cooked through.
7. Drain on absorbent kitchen paper. Sprinkle with Confectioner’s sugar and serve.
