Apple Muffins

ingredients

1 tablespoon oil
2 cups All purpose flour
1/2 teaspoon) salt
2 teaspoons baking powder
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon mixed spice
2 large eggs
1/4 cup butter, melted
2/3 cup buttermilk
1 tablespoon lemon juice
2 medium-sized dessert apples, peeled, cored and grated or finely chopped

method

1. Heat the oven to 230°C (450°F).

2. Grease a deep 12 bun muffin pan).

3. Sift the flour, salt, baking powder, sugar, cinnamon, nutmeg and mixed spice into a large mixing bowl. Beat the eggs until pale yellow in colour.

4. Beat in the butter, buttermilk and lemon juice. Stir this mixture into the flour and mix quickly until just combined. Fold in the apple.

5. Spoon the batter into the muffin pan and bake for 15 - 20 minutes or until a skewer inserted into a muffin comes out clean.

6. Cool the muffins in the pan for about 5 minutes then transfer to a plate.
