Apple Noodle Pudding

Cooking time: 55 minutes

ingredients

serves 6
3/4 pound fine noodles
1 tablespoon oil
2 tablespoons sugar
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon mixed spice
2 large tart apples, peeled, cored and grated
1/3 cup Seedless white raisins or raisins
2 eggs, beaten
2 tablespoons milk
2 tablespoons butter, melted

method

1. Heat the oven to 180°C (350°F).

2. Cook the noodles for 6 - 9 minutes in boiling water until cooked but firm.

3. Drain and add the sugar, salt, spices, apples and raisins. Spoon into a baking dish.

4. Combine the eggs and milk and pour over the dish.

5. Finally sprinkle over melted butter.

6. Bake for 45 minutes or until the pudding is firm and golden.
