Apple Tapioca Pudding

ingredients

serves 4
2 cups milk
1/3 cup tapioca
1/4 cup sugar
1/2 teaspoon ground allspice
1/2 teaspoon grated lemon rind
1 tablespoon butter
2 eggs, separated
1 pound tart apples, peeled, cored and chopped
1/3 cup Seedless white raisins or golden raisins
1/4 teaspoon grated nutmeg
2 tablespoons soft brown sugar
2 egg yolks

method

1. Heat the oven to 180°C (350°F). Put the milk in a saucepan and heat.

2. Just before it boils, sprinkle over the tapioca.

3. Bring to the boil and cook, stirring frequently, for 10 minutes or until thickened.

4. Stir in the sugar, allspice, lemon rind and butter and cook, stirring, until the sugar has dissolved. Cool mixture slightly.

5. Cover the bottom of a greased 2 qt baking dish with the apples and sprinkle them with the Seedless white raisins or raisins, nutmeg and brown sugar.

6. Beat the egg yolks into the tapioca mixture and spoon this over the apples.

7. Bake for 30 - 40 minutes or until the top has set and is golden brown.
