Apple Yogurt Fool

Cooking time: 15 - 30 minutes plus chilling

ingredients

serves 6
1 pound tart apples, peeled, cored and chopped
1/3 cup raisins
1/2 teaspoon mixed spice
2 cups plain yogurt
green food colouring

to serve

2 tablespoons Demerara or granulated brown sugar
2 tablespoons chopped nuts

method

1. Put the apples in a saucepan with the raisins, 2 tablespoons water and the mixed spice.

2. Bring to the boil then simmer gently until the apples are tender.

3. Transfer to a fruit bowl and chill until cold.

4. Stir in the yogurt and a few drops of food colouring. Spoon into individual glass dishes and sprinkle over the sugar and nuts.

5. Chill until required.
