Apricot and Raisin Stuffing

ingredients

makes about 14 ounce
3 tablespoons butter
1 large onion, sliced
1 cup dried apricot pieces, soaked and drained
2/3 cup seedless raisins
juice and grated rind of 1 orange
1 cooking apple, peeled, cored and chopped
2 cups fresh white breadcrumbs
1/4 tsp ground ginger
salt and freshly ground black pepper

method

1. Heat the butter in a small pan and fry the onion over a moderate heat until it is translucent.

2. Turn the onion into a large mixing bowl and stir in the dried apricots, raisins, orange juice and rind, chopped apple, breadcrumbs and ground ginger.

3. Season with salt and black pepper. Mix well with a wooden spoon, then allow to cool. Use the stuffing to pack the neck end of the bird.
