30 baby new potatoes
1 cup sour cream

1. Preheat the oven to moderately hot 200°C (400°F). Prick the potatoes with a fork and place on a baking tray. Bake for 40 minutes, or until tender. Cool to room temperature.
2. Cut a large cross in the top of each potato, squeeze open, and top with a small dollop of sour cream and a little caviar.

Choose very small potatoes of the same size, so they take the same time to cook and are easy to eat. Use red or black caviar, or a combination. Caviar comes in different varieties and you may like to try various ones.
