1/4 cup butter
4 lean bacon slices, diced
1 large onion, finely chopped
1 small carrot, diced
1 small turnip, diced
1 cup dried or split green peas, soaked in water overnight
7 1/2 cups ham or bacon stock
1 bouquet garni
salt
freshly ground black pepper
2/3 cup milk
method
2. Stir in the drained peas and stock and bring to the boil. Add the bouquet garni, then cover the pan and simmer for 2 - 2 1/2 hours or until the vegetables have been reduced to a pulp.
3. Remove the bouquet garni, adjust the seasoning and stir in the milk. Reheat and serve.
