Bacon Cooked with Apples and Onions

Cooking time: 30 minutes

ingredients

serves 4
2 tablespoons oil
1 pound onions, sliced
1 pound tart apples, cored and sliced
freshly ground black pepper
3/4 pound bacon slices, cut into 1/2 inch pieces
1 tablespoon fresh parsley, chopped

method

1. Heat the oil in a large saucepan. Add the onions and fry them until transparent.

2. Stir in the apples, cover and cook for about 10 minutes or until the apples are soft.

3. Meanwhile fry the bacon until crisp, stirring so that it does not stick. Drain the bacon on absorbent paper.

4. Season the apple and onion mixture with pepper, mix in the bacon and turn into a warmed serving dish.

5. Sprinkle the parsley over and serve hot.
