A classic mix of flavours in a healthy, traditional family pudding. Serve warm, with skimmed-milk custard or low fat frozen yogurt.

4 medium tart apples
1 tbsp clear honey
grated rind and juice of 1 lemon
1 tbsp low fat spread
skimmed-milk custard, to serve
method
1. Preheat the oven to 180°C/350°F. Remove the cores from the apples, leaving them whole.
2. With a cannelle or sharp knife, cut lines through the apple skin at intervals. Put the apples in an ovenproof dish.
3. Mix together the honey, lemon rind juice and low fat spread.
4. Spoon the mixture into the apples and cover the dish with foil or a lid Bake for 40 - 45 minutes, or until the apples are tender.
Serve with skimmed milk custard.
