1. Using an apple corer, scoop out the core from each apple, working from the stalk end. Score the apples around the middle with a sharp knife, then stand them in a roasting pan or small ovenproof dish.
2. In a bowl, mix together the orange zest and juice, muscovado sugar and dried cherries. Divide the mixture into four and spoon one portion into the hollow centre of each apple.
3. Dot the apples with the butter and bake at 200°C (180°C fan oven) for 30 - 35 minutes or until they are soft.
4. Serve the baked apples warm, with creme fraiche or heavy cream.
