Baked Apricots with Almonds

ingredients

serves 8
12 apricots, halved and stoned
6 tbsp golden superfine sugar
2 tbsp amaretto liqueur
2 tablespoons sweet butter
1/3 cup flaked almonds

method

1. Put the apricot halves, cut-side up, in an ovenproof dish. Sprinkle with the sugar, drizzle with the liqueur, then dot each apricot half with a little butter. Scatter over the flaked almonds.

2. Bake at 200°C (180°C fan oven) for 20 - 25 minutes until the apricots are soft and the juices are syrupy.

Serve warm, with creme fraiche.
