1. Trim the beet and carefully rinse in cold water, making sure you do not tear the skins.
2. Rub the butter over the middle of a large piece of foil. Put the beet on the buttered foil and season with salt and pepper. Bring the edges of the foil up over the beet and fold together to seal and form a parcel. Put on a baking sheet.
3. Bake at 200°C (180°C fan oven) for 1 1/4 - 1 1/2 hours or until the beet are soft and the skin comes away easily.
4. Leave for a minute or two until cool enough to handle, then rub off the skins. Scatter chopped parsley over the beet to serve.
