Baked Bananas

ingredients

serves 8
5 cardamom pods, split
juice of 1 orange
juice of 1 lemon
2 tbsp muscovado sugar
4 tbsp apricot jam
2 tablespoons Butter
4 tbsp rum or brandy
6 large bananas

method

1. Extract the seeds from the cardamom pods and crush with a pestle and mortar.

2. Combine the crushed cardamom seeds, orange and lemon juices, sugar, apricot jam, butter and rum in a pan and warm gently over a low heat until the butter has melted.

3. Peel and halve the bananas. Put into a large, shallow ovenproof dish, add the fruit juice mixture and turn to coat. Bake at 200°C (180°C fan oven) for 15 - 20 minutes or until the bananas are soft, basting occasionally.

Serve immediately, with ice cream or creme fraiche.
