Baked Egg Custard

ingredients

serves 4
1 pint whole milk
3 large eggs
2 tbsp superfine sugar
butter, to grease
freshly grated nutmeg, to taste

method

1. Warm the milk in a pan, but do not boil. Whisk the eggs and sugar together lightly in a bowl, then pour on the hot milk, stirring.

2. Strain the mixture into a greased 1 1/2 pint ovenproof dish. Grate the nutmeg on top and bake in the middle of the oven at 170°C (325°F) for about 45 minutes until set and firm to the touch.

Serve hot or cold.
