4 cod steaks
4 tomatoes, skinned and sliced
1/4 pound mushrooms, sliced
1 green bell pepper, cored, seeded and sliced
1 tablespoon fresh parsley, chopped
salt
freshly ground black pepper
method
1. Heat the oven to 200 C (400 F).
2. Put each cod steak on a square of foil large enough to enclose it. Cover it with tomato, mushroom and green pepper slices, then sprinkle with parsley and seasoning.
3. Bring up the foil and fold it over to enclose the fish.
4. Place the parcels on a baking sheet and bake for 40 minutes or until the fish flakes easily.
