Even a small amount of flavoured olive oil can penetrate the flesh of a straightforward baked potato and transform it into a golden treat.

2 large baking potatoes, well scrubbed
1 teaspoon olive oil
1/8 level teaspoon salt
1 clove garlic, peeled and crushed
1/4 level teaspoon paprika
method
OVEN: Preheat to 220°C (425°E)
1. Cut the potatoes in half lengthways and use a small sharp knife to score the cut surface deeply with a crisscross pattern. Arrange the potatoes on a baking sheet.
2. Mix the oil, salt and garlic, and brush the scored surfaces with the mixture. Sprinkle the paprika evenly over them, then bake in the heated oven for 1 hour, or until the potatoes are tender and their tops golden brown.

For a more strongly spiced flavour, add 1/4 level teaspoon each of ground cumin, ground cilantro and cayenne pepper to the oil mixture before brushing it on the potatoes.
