3 pound American-style pork spare ribs
1/2 cup honey
6 cloves garlic, crushed
2 inch piece fresh ginger, finely grated
1/4 teaspoon Tabasco
3 tablespoons chilli sauce
2 teaspoons grated orange rind
method
1. Cut the ribs into small pieces, with about 1bone per piece. Place in a large dish. Combine the remaining ingredients and pour over the ribs. Stir until well coated. Refrigerate for several hours, or overnight.
2. Preheat the oven to moderately hot 200°C (400°F). Drain the ribs and place the marinade in a small pan. Place the ribs in one or two large shallow ovenproof dishes in a single layer.
3. Bring the marinade to the boil and simmer gently for 3 - 4 minutes, or until it has thickened and reduced slightly.
4. Brush the ribs with the marinade and bake for 50 minutes, basting with the marinade three or four times. Cook until the ribs are well browned and tender.
Serve the ribs hot with any remaining marinade.
