1. Scrub the potatoes and prick all over with a fork. Put them on a baking sheet and bake at 200°C (180°C fan oven) for about 1 1/2 hours or until I the potatoes feel soft when gently squeezed, turning them over once.
2. When the potatoes are cooked, score a deep cross on each one, season with salt and pepper and top with a generous knob of butter to serve.
variations: Top the jacket potatoes with grated cheese, or creme fraiche and chopped chives, or soured cream and chopped scallions.
