Baked potatoes with egg makes an economical dish for a children s meal.

4 large baking potatoes
1 tablespoon butter
1 tablespoon chopped chives
pinch of grated nutmeg
salt
freshly ground black pepper
1/4 cup thick cream
4 eggs
method
1. Heat the oven to 190°C (375°F).
2. Prick the potatoes all over, then bake for 1 1/2 hours or until tender.
3. Cut the tops off the potatoes and scoop out the flesh, being careful not to break the skin.
4. Mash the flesh with the butter, then beat in the chives, nutmeg, seasoning and cream. Gradually beat in the eggs.
5. Stuff this mixture back into the potato skins, piling it up in the centre.
6. Return the stuffed potatoes to the oven to bake for a further 10 minutes or until the filling is lightly browned.

For sweet cheesy potatoes, add 1 cup grated Cheddar cheese, 1 tablespoon chutney and 1 finely chopped celery stalk to the mashed potato. Bake 10 minutes.
