2 3/4 cups self rising flour
1 tsp Baking soda
1/2 tsp salt
3 large ripe bananas, about 1 pound, peeled
1/2 cup golden superfine sugar
1 large egg, beaten
1/4 cup milk
3/8 cup butter, melted and cooled
1/2 cup pecan nuts, toasted and roughly chopped
method
1. Line a muffin tin with 12 muffin paper cases. Sift the flour, Baking soda and salt together into a large mixing bowl and put to one side.
2. Mash the bananas in a bowl, using a fork. Add the superfine sugar, beaten egg, milk and melted butter and mix together until well combined. Add this to the flour mixture, along with the pecan nuts and stir briefly; the mixture will be lumpy and rather like a batter in consistency.
3. Spoon the mixture into the muffin cases, half-filling them, then bake at 180°C (160°C fan oven) for 20 minutes or until they are golden and well risen.
4. Transfer to a wire rack to cool a little. Serve while still warm.
