1. Sift 1 cup flour with sugar, salt and baking powder.
2. Mix egg and milk and add to flour mixture gradually, stirring until smooth.
3. Add shortening. Peel bananas and cut crosswise into halves or quarters.
4. Roll in remaining flour, then cover with batter.
5. Fry in hot deep fat (375°F.) 4 to 6 minutes.
6. The batter is stiffer than for most fritters and requires longer cooking.
