1/2 cup butter, diced, plus more for greasing
2 cups self rising flour
1/2 tsp salt
3/4 cup superfine sugar
3/4 cup Seedless white raisins
1/2 cup pecan nuts, chopped
5/8 cup candied cherries, halved
2 eggs, beaten
1 pound (peeled weight) ripe bananas, mashed
method
1. Preheat the oven to 180°C/350°F. Grease a 2 pound loaf tin with butter and line the base with greaseproof paper.
2. Sift the flour and salt into a large bowl and rub in the butter until the mixture resembles fine crumbs.
3. Stir in the sugar, Seedless white raisins, nuts and cherries until evenly coated with the mixture.
4. Add the eggs and bananas to the mixture and beat well until evenly incorporated.
5. Transfer to the prepared tin and bake for about 1 hour 10 minutes, until risen and just firm to the touch. Allow the cake to cool in the tin, then unmould on a cooling rack.
