Bananas in Orange Juice

Cooking time: 20 minutes

ingredients

serves 4
4 firm bananas
2 tablespoons butter
1 tablespoon Barbados or dark brown sugar
pinch of nutmeg
1/2 cup freshly squeezed orange juice
1/2 cup chopped walnuts (optional)

method

1. Peel the bananas and cut them in half lengthwise. Melt the butter in a large skillet over moderate heat.

2. Lay the bananas in the pan, cut side up, and brown the underside, this will take about 1 1/2 minutes.

3. Sprinkle them with half the sugar and turn them over. Sprinkle them with the remaining sugar and the nutmeg.

4. Pour the orange juice over and cook for 2 minutes more.

5. Transfer to a warm serving dish and scatter the walnuts over if used.
