Bean and Potato Open Pie

ingredients

serves 4 - 6
3 tablespoons butter
2 pounds potatoes
a little milk
salt and pepper
1 1/2 teaspoons lard
1 medium onion, chopped
1/2 pound minced beef
3/4 cup mushrooms, sliced
1 can baked beans
5/8 cup cheese, grated

method

1. Preheat oven to very moderate, 170°C (325°F).

2. Grease a 8 inch pie plate with 1 1/2 tablespoons butter.

3. Cook potatoes in salted water till tender. Drain. Mash and cream with rest of butter and a little hot milk.

4. Season. Line pie plate with potato and bake in centre of oven for 15 - 20 minutes.

5. Melt lard in a pan and fry onion till soft. Add meat and mushrooms and cook for a further 10 minutes. Fold in baked beans.

6. Pile mixture into pie plate, sprinkle with cheese and bake for a further 30 minutes till potato is crisp.
