Bean Soufflette

ingredients

serves 4
cheese pastry made with 1 1/4 cups flour
1 tablespoon lard
4 fatty bacon rashers, chopped
1 medium onion, chopped
1 can (500 g or 1 lb) baked beans
2 eggs, separated
1 dessertspoon mayonnaise
salt and pepper
1 tablespoon finely grated Parmesan cheese

method

1. Preheat oven to moderately hot, 200°C (400°F).

2. Line a 8 inch flan ring with pastry and bake blind for 10 - 15 minutes.

3. Lower oven setting to moderate, 180°C (350°F).

4. Melt lard in a pan. Fry bacon and onion. Place in flan with baked beans.

5. Blend egg yolks with mayonnaise and seasoning. Whisk egg whites till stiff. Fold into egg yolk mixture.

6. Pile baked beans on top of bacon and onion in the flan case. Top with the egg mixture and sprinkle with cheese. Bake in centre of oven for 25-30 minutes till firm and golden.
