1 slice white bread, crusts removed
1/3 cup milk
1 1/2 pound minced beef
2 medium-sized eggs, lightly beaten
2 teaspoons mustard powder
salt
freshly ground black pepper
1/2 teaspoon dried thyme
1 onion, finely chopped
2 tablespoons fresh parsley, chopped
1 tablespoon All purpose flour
1/2 pound Mozzarella cheese, thinly sliced
2 tablespoons melted butter
parsley sprigs to garnish
method
1. Soak the bread in the milk and squeeze out the excess. Combine the bread, meat, eggs, mustard, salt, pepper, thyme, onion and parsley in a bowl and knead together.
2. Spread out a piece of foil on a baking sheet and dust with flour. Spread the meat on it about 3/4 inch deep. Press with the back of a spoon to make a compact rect- . angle. Cover and chill for 1 hour.
3. Heat the oven to 180°C (350°F) . Uncover the meat and place the cheese over it. Use the foil to help you roll up the meat just like a jelly roll. Transfer the roll to a shallow baking tin (pan), with the seam underneath. Brush it with the melted butter and bake for 45 - 50 minutes for medium-rare, 1 hour for well-done.
4. To serve, transfer the roll to a heated serving dish and garnish with the parsley. Serve hot accompanied by a tomato sauce.
