The mixture is quite soft, so handle carefully and use a fish slice for turning to prevent the burgers from breaking up during cooking.

1 small onion, chopped
2 cups small cup mushrooms
1 pound lean minced beef
1 cup fresh whole wheat breadcrumbs
1 tsp dried mixed herbs
1 tbsp tomato puree
flour, for shaping
salt and black pepper
method
1. Place the onion and mushrooms in a food processor and process until finely chopped. Add the beef, breadcrumbs, herbs, tomato puree and seasonings. Process for a few seconds, until the mixture binds together but I still has some texture.
2. Divide the mixture into 8 - 10 pieces, then press into burger shapes using lightly floured hands.
3 Cook the burgers in a non-stick skillet, or under a hot grill for 12-15 minutes, turning once, until evenly cooked. Serve with relish and salad, in burger buns or pitta bread.
