1/4 cup Lard
3/4 cup onion, finely chopped
2 garlic cloves, finely chopped
1 1/2 pound minced (ground) beef
1/2 pound pork sausagemeat
14 ounce canned tomatoes
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon paprika
salt and freshly ground black pepper
dash of Tabasco
1 cup fine, dry breadcrumbs
2 medium-sized eggs, beaten
method
1. Heat the oven to 180°C (350°F). Melt the dripping in a large saucepan. Fry the onions and garlic over medium heat until softened. Add the beef and sausagemeat and mix them up.
2. Add the tomatoes with their juice, Worcestershire sauce, thyme, paprika and Tabasco. Stir to mix and then taste for seasoning.
3. Add the breadcrumbs and stir again. Remove from the heat and stir in the beaten eggs, mixing well.
4. Pack the mixture firmly into a greased 9 inch ring mould.
5. Bake for 1 1/4 - 1 1/2 hours or until cooked and set. Turn out.
