2 pound skirt steak, cut in strips
3 tablespoons oil
3 onions, sliced into rings
1 clove garlic, crushed
1/4 cup All purpose flour
1/4 pint black coffee
1/4 pint beef stock or red wine
14 ounce can peeled tomatoes
salt and pepper
pinch of grated nutmeg
2 teaspoons soft brown sugar
method
1. Fry the meat in the oil, lower the heat, add the onions and garlic and cook until soft.
2. Stir in the flour and cook for 1 minute. Gradually mix in the coffee and stock or wine, then add the tomatoes.
3. Season, add the nutmeg and soft brown sugar, bring to simmering point and transfer to an ovenproof casserole.
4. Cook, covered, in a moderate oven (160°C, 325°F) for 2 hours.
