2 tablespoons oil
1 onion, peeled and chopped
2 garlic cloves, peeled and chopped
1 tablespoon fresh ginger root, finely chopped
3 pound flank steak, trimmed and cubed
juice of 1 lemon
4 tablespoons soy sauce
1 1/2 cups orange juice
3 tablespoons red wine vinegar
2 1/4 cups light stock or water
salt
freshly ground black pepper
method
1. Heat the oven to 150°C (300°F).
2. Heat the oil in a flameproof casserole. Fry the onion, garlic and ginger for 3 minutes. Add the beef and cook for 5 minutes, stirring all the time.
3. Add the remaining ingredients and bring to the boil. Cover and cook in the oven for 3 1/4 - 4 hours until the meat is tender. Check seasoning and serve hot.
