10 ounce fine green beans, cut into 1 inch pieces
2 tbsp sunflower oil
1 medium onion, sliced
1 tsp grated fresh root ginger
1 garlic clove, crushed
1 tsp chilli powder
1 1/4 tsp salt
1/4 tsp turmeric
2 tomatoes, chopped
1 pound lean beef, cubed
5 cups water
1 tbsp chopped fresh cilantro
1 red pepper, sliced
2 green chillies, chopped
method
1. Cook the green beans in a saucepan of boiling salted water for about 5 minutes, then drain and set aside.
2. Heat the oil in a large saucepan and fry the sliced onion until golden.
3. Mix together the ginger, garlic, chilli powder, salt, turmeric and chopped tomatoes. Spoon into the onions and stir-fry for about 5 - 7 minutes.
4. Add the beef and stir-fry for a further 3 minutes. Pour in the water, bring to the boil and lower the heat. Cover and cook for about 45 - 60 minutes until most of the water has evaporated and the meat is tender.
5. Add the green beans and mix everything together well.
6. Finally, add the red pepper, fresh cilantro and chopped green chillies and cook for a further 7-10 minutes stirring occasionally. Serve hot with whole wheat chapatis.
