12 ounce beef with fat removed, minced
1/2 cup cooked beet, peeled and diced
1 1/4 cups fresh whole wheat breadcrumbs
1 egg, beaten
2 teaspoons red wine vinegar
1/2 level teaspoon dried dill
Freshly ground black pepper
1 tablespoon olive oil
Shredded lettuce, onion rings and dill fronds to garnish
Soured cream to garnish
method
1. Combine the beef, beet, breadcrumbs, egg, vinegar and dried dill, and season with pepper. Divide the mixture into four, shape into flat cakes and refrigerate for 20 minutes.
2. Heat the oil in a skillet and brown the beefburgers over a high heat for 1 - 2 minutes on each side. Lower the heat to moderate and cook the burgers for 5 minutes more on each side.
3. Drain the beefburgers on kitchen paper before arranging them on individual plates and garnishing with the lettuce, onion and dill. Hand the soured cream round for the diners to put a teaspoonful on their burger; you can mix a little chopped dill with the cream.
