Fresh baby spinach leaves or rocket could be used in place of the chicory, if you prefer.

2 medium cooked beet, diced
2 heads chicory, sliced
1 large orange
4 tbsp natural low fat yogurt
2 tsp wholegrain mustard
salt and black pepper
method
1. Mix together the diced cooked beet and sliced chicory in a large serving bowl.
2. Finely grate the rind from the orange. With a sharp knife, remove all the peel and white pith. Cut out the segments, catching the juice in a bowl. Add the segments to the salad.
3. Add the orange rind, yogurt, mustard and seasonings to the orange juice, mix thoroughly, then spoon over the salad.
