Birthday Cup Cakes

Birthday cup cakes are an A inexpensive and pretty idea for a children's party, when there is no time to decorate a large cake.

ingredients

makes 12
1 cup + 2 tablespoons All purpose flour
1 level teaspoon baking powder
pinch of salt
3/8 cup margarine
3/8 cup superfine sugar
1 large egg, beaten
1 tablespoon orange squash, undiluted
7/8 cup Confectioner’s sugar
pink food colouring
12 tiny birthday candles in holders

method

1. Preheat oven to moderately hot, 190°C (375°F).

2. Line 12 bun tins with paper cases.

3. Sift the flour with the baking powder and salt.

4. Cream the margarine with the superfine sugar until light and fluffy.

5. Add beaten egg to creamed mixture a little at a time.

6. Stir in the orange squash.

7. Fold in the flour.

8. Spoon mixture into cake cases.

9. Bake in the centre of the preheated oven for 15 minutes. Leave to cool in their paper cases.

10. Mix Confectioner’s sugar with enough cold water to make an icing which will thickly coat the back of a wooden spoon.

11. Colour the icing a delicate pink, dropping colour from top of skewer or knitting needle.

12. Spoon icing on to cakes.

13. While the icing is still wet, add a tiny candle in its holder to centre of each cake. Leave to set.
