6 Bloaters, filleted
1/2 cup All purpose flour
salt
freshly ground black pepper
5 tablespoons butter
1 tablespoon lemon juice
1 tablespoon fresh parsley, chopped
method
1. Wash the fillets under cold running water and pat dry. Season the flour with salt and pepper. Dip each fillet in the flour until it is well coated. Set aside.
2. Heat the butter in a frying-pan. When the foam subsides, add the fillets and cook for 3 minutes on each side or until lightly browned and the flesh flakes easily.
3. Transfer the Bloaters from the pan to a heated serving dish. Spoon over the lemon juice and then the pan juices.
Sprinkle with parsley and serve.
