method
1. Preheat oven to very moderate, 170°C (325°F).
2. Trim meat and cut into individual portions.
3. Heat oil and butter together in a flameproof casserole and fry shallots or onions until lightly browned.
4. Add meat and brown on all sides.
5. Add carrots and season well with salt, pepper and nutmeg.
6. Cover closely with lid or foil and cook in centre of oven for 2 hours, or until meat is tender.
7. Serve with creamed potatoes and a green vegetable.
Slow Cooker Method
1. Proceed as stages 2-5 above, inclusive, but using a saucepan.
2. Transfer to a preheated slow cooker. Cook on High for 30 minutes and on Low for 6 - 8 hours.
