1 head celery, trimmed and washed
salt and pepper
1 medium onion, finely chopped
1/4 cup butter
1/2 cup walnut pieces
coarsely grated rind of 1 lemon
method
1. Cut the celery diagonally into 1 1/2 inch sticks, then blanch in boiling salted water for 5 minutes.
2. Saute the onion in 2 tablespoons of the butter, then add the celery and saute gently for 5 to 10 minutes, until tender but still crisp.
3. Meanwhile, fry the walnuts in the remaining butter for 1 to 2 minutes.
4. Stir in the lemon rind, then add the nut mixture to the celery and toss well.
5. Season to taste.
