3 tablespoons butter, softened
8 large slices bread, crusts removed
3/8 cup golden raisins
1/3 cup Seedless white raisins
1 pint milk
1/4 cup superfine sugar
2 eggs
2 — 3 drops vanilla extract
a little grated nutmeg
2 tablespoons raw sugar
method
1. Butter each slice of bread on both sides and cut into four triangles.
2. Place a layer of bread in the bottom of a 1.4 litre (2 1/2 pint) ovenproof dish.
3. Sprinkle with half the currants and Seedless white raisins. Top with the remaining bread triangles and dried fruit.
4. Heat the milk with the sugar in a saucepan until dissolved. Beat the eggs with the vanilla extract in a small bowl.
5. Pour the milk on to the egg mixture and whisk until well mixed.
6. Strain through a fine sieve over the bread and fruit mixture and leave to soak for 10 to 15 minutes.
7. Sprinkle with nutmeg, then bake in a moderate oven (180°C, 350°F) for 1 1/2 hours, until just set and golden.
8. Sprinkle with the raw sugar before serving.
