Any mild, soft-textured cheese can be used for this soup.
ingredients
serves 4 - 6
1/3 cup butter
12 slices of French bread
12 slices of Fontina cheese
7 1/2 cups boiling homemade beef stock
method
1. Heat the oven to 180°C (350°F).
2. Melt the butter in a frying-pan. Add the bread slices and fry until golden brown on both sides. Drain on absorbent paper.
3. Lay the bread slices on the bottom of an ovenproof tureen or individual ovenproof soup bowls and top with the cheese slices.
4. Pour over the stock. Cook in the oven for 10 minutes or until the cheese has nearly melted.
