Broiling before stewing removes much of the fat and crisps this rather fatty meat.
ingredients
serves 4
2 breasts of lamb, divided into 1-rib pieces
1 small onion, chopped
2/3 cup tomato juice
2/3 cup water
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon vinegar
salt and freshly ground black pepper
method
1. Heat the broiler to high. broil the rib pieces until browned on both sides.
2. Meanwhile, put the remaining ingredients in a large saucepan and bring to the boil.
3. Transfer the riblets to the saucepan and mix into the sauce.
4. Cover the pan and simmer gently for 1 1/2 hours.
