Nutty and slightly chewy, brown rice makes a filling supper dish when combined with fish, fruit and nuts.

1 cup brown rice
2 1/4 cups chicken stock
2 tablespoons butter
1 teaspoon salt
6 ounce smoked haddock fillets
1/4 cup salted peanuts
1/4 cup raisins
1/4 cup grated Parmesan cheese
2 hard-boiled eggs
1 tablespoon finely chopped parsley
method
1. Wash and pick over the rice. Place in a pan with the stock, butter and salt. Bring to the boil, stir once and cover. Reduce heat to very low and leave the rice very gently simmering for 45 minutes.
2. About 10 minutes before the rice will be ready, place the haddock in a bowl of boiling water. Leave for 15 minutes.
3. Roughly chop the peanuts. Set aside. Remove the rice from the heat and rinse with hot water.
4. Turn into hot dish and fluff with butter. Set aside in a warm place. Drain and flake the haddock.
5. Stir into the rice with the peanuts, raisins and cheese. Slice the hard-boiled eggs and arrange on top of the rice.
6. Sprinkle with finely chopped fresh parsley and serve.
