Dark, luscious brownies, flecked with walnuts, are a treat few people can resist, and can be served hot or cold. Their strong chocolate flavour makes them a favourite with adults as well as children.

1/2 cup sweet butter
3/8 cup cocoa
Salt
7/8 cup superfine sugar
2 large eggs
1/2 cup self rising flour
1 teaspoon natural vanilla extract
3/8 cup walnut pieces
method
1. Preheat the oven to 180°C (350°F), then line a 12 x 8 x 1 inch baking tin with baking paper.
2. Place the butter in a saucepan, allow it to melt gently, then take it off the heat.
3. Sift the cocoa into the melted butter, add a pinch of salt and the superfine sugar and mix together. Break the eggs into the cocoa mixture and whisk until smoothly blended.
4. Sift the flour into the pan, fold it in, add the vanilla extract and the walnuts and stir gently
5. Pour the brownie mixture into the baking tin. Bake for 18 minutes, or until just set but still soft (it will firm up as it cools).
6. While it is still warm, turn the cooked mixture out onto a large board and cut into square brownies.
